A few favorite recipes to make life easier with Kids :)
Ingredients are not part of the pantry necessities, so
make sure to buy in advance.
These are not Vegan, but they are vegetarian & the
names were created by my daughter.
The "Bestest Chocolate Ice Cream ever"
Note to Moms: simplest 3 ingredients homemade Ice cream
Ingredients:
500g Creme 35% (Vegan: Coconut Creme)
50g Organic Cocoa Powder
150g Sweet Condensed Milk (Vegan: sweet coconut condensed milk)
Preparation:
Whip the cream. Once whipped, add the condensed milk &
mix gently together well. The texture should be fluffy & smooth.
Finally add the cocoa powder and mix well.
Place in a glass bowl or square, cover and place in freezer for at
least 3 hours so it hardens. Then Scoop & Enjoy!
Note: The Vegan version does not have the same consistency as
the dairy version, but it is still yummy!
The "Hurray for Sushi" Sessions
Note to Moms: simplest ingredients to make 5 kinds of maki rolls
Ingredients:
Sushi Seaweed leafs for maki rolls
Pre-cooked 2 cups Sushi rice
2 tbsp rice vinegar
2 pre-cooked & peeled & julienned sweet potatoes
2 small julienned cucumbers
2 julienned beetroots
1 cup blueberries
1 cup spinach
1 cup sliced strawberries
2 pre-sliced avocado flesh
Some mayonnaise to taste (Vegan mayonnaise)
Some soya sauce to dip in
Preparation:
Mix warm cooked sushi rice with the rice vinegar in a bowl.
Each maki will be made by taking 1x flat seaweed sheet &
placing a thin coat of the rice mixture on it with the back of
a spatula so it sticks less.
Then add the following combinations for each roll:
1) mayonnaise, spinach, strawberry, avocado
2) mayonnaise, blueberries, sweet potatoes
3) cucumber, strawberry, avocado
4) beetroot, strawberry, avocado
5) beetroot, sweet potato, blueberries
Once loaded, roll tighly together & slightly wet the end of
the roll to make it stick together. Do not overload or these
will be hard to roll up. Then cut into 1/2" rolls, plate, serve
with soy sauce & Enjoy!
Note: Vegan mayonnaise is available in most health grocery stores.
