Raspberry Dark Chocolate Cake
Cinnamon Cocoa
Chip Cookies
Ingredients:
100g Almond flour
100g Amaranth Flour
50 g Honey or maple syrup
150g melted coconut oil
3 eggs (3 ripe bananas for Vegan)
1 1/2 cups raspberries frozen or fresh
1 cup semi-sweet chocolate chips
Preparation:
Preheat oven to 350F/180C.
In a large mixing bowl, mix the melted coconut oil & honey until smooth. Add the eggs (or bananas) & mix until smooth.
Add the flour & mix until smooth.
Add the chocolate chips. Mix together thoroughly.
Finally add the raspberries & mix gently in.
Pour the mixture into a rectangular shaped cake baking tin. Bake for about 45 minutes or until golden.
If you want to make sure your cake is ready, stick a knife in it & if there is batter on the knife when you take it out, then you must keep baking it. No batter then the cake is ready!
Cool to room temperature & Enjoy!
Ingredients:
1 cup melted coconut oil
2 1/2 cups Buckwheat flour
1/2 cup honey or maple syrup
1 tsp vanilla extract
1 tsp cinnamon powder
2 eggs (Vegan: 2 tbsp Chia seeds soaked in 6 tbsp water for 10 min.)
2 cups semi-sweet chocolate chips
Preparation:
Preheat your oven to 350F (180C)
In a large mixing bowl, mix coconut oil & honey until smooth. Add eggs (or chia soaked seeds) & vanilla extract. Mix until smooth.
Combine flour with cinnamon & add to mixture. Mix until smooth. Add chocolate chips & mix until smooth.
Form little balls (1 tbsp size) and place on a baking sheet with 1 inch apart from one another.
Bake for 8-10 minutes or until golden.
Cool to room temperature & Enjoy!
Rose Water Cardamom Ice Cream
Ingredients:
500g Creme 35% (Vegan: Coconut Creme)
150g Sweet Condensed Milk (Vegan: sweet coconut condensed milk)
1 tsp Rose water
1/2 tsp cardamom powder
Preparation:
Whip the cream. Once whipped, add the condensed milk &
mix gently together well. The texture should be fluffy & smooth.
For the Vegan version the consistency is not the same as with dairy, but it tastes great.
Finally add the cardamom powder, rose water & mix well.
Place in a glass bowl or square, cover & place in freezer for at least 3 hours so it hardens. Then Scoop & Enjoy!

Mango & Coconut Chia Dessert
Ingredients:
1 Mango peeled & diced
1 can coconut milk
1 cup coco water (regular water will do)
1 cup Chia seeds
Preparation:
Add coconut milk & coco water to chia seeds in a glass bowl. Mix & combine well using a whisk.
Let the chia seeds soak up the liquids for at least 15 minutes. It should have a pudding like consistency.
Pour into dessert cups. Top up with Mango pieces.
Serves 4 portions. Enjoy!
