Strawberry Coco Pancakes

Blueberry or Raspberry Waffles
Breakfast 

 

Ingredients:

1 cup Amaranth flour

1 cup Buckwheat flour

2 tbsp maple syrup

1 3/4 cup Almond milk

6 tbsp coconut oil melted

2 eggs  (replace with 2 ripe Bananas for Vegan)

1 1/2 cups fresh raspberries or blueberries, cut in 1/2

1/2 tsp cinnamon powder

Preparation:

For this recipe you need a waffle maker.

In a large bowl, mix syrup & oil together until smooth. 

Add eggs (or bananas), and mix until smooth. Add flour, to the mix & mix until smooth. Finally, add nut milk (not ice cold) & mix until a smooth batter is formed.

Once you have a smooth batter, add the berries & mix thoroughly. The batter should have a slight color.

You can then use the batter to make your waffles one at a time in the waffle maker. Usually 1/2 cup of batter should make one waffle. Each waffle maker has instructions.

Once cooked, plate & drizzle with maple syrup.

Add a sprinkle of cinnamon & a few berries & Enjoy!

 

Ingredients:

2 Eggs (replace with 2 ripe bananas for Vegan)

250 ml Almond milk

4 tbsp coconut oil melted

100g Amaranth flour

100g Almond or Coconut flour

1 tbsp honey (Vegan: Maple Syrup)

1 1/2 cups Fresh strawberries diced

1/2 cup raw shredded coconut

Preparation:

For this recipe you will need a small non-stick greenpan & if you have a crepe/pancake pan, even better!

In a large bowl, mix eggs (or bananas) with milk.

Add the melted coconut oil & mix.

In another bowl, mix dry ingredients together. Add the wet ingredients mixture to the dry one little by little, mixing well.

Beat in the strawberries until the batter is smooth.

Heat you crepe pan & add a 1/4 cup batter amount per crepe. Let the batter cook & flip to the other side.

Once the crepe is cooked, plate & drizzle with maple syrup & sprinkled shredded coconut. Enjoy!

Toasted Homemade Muesli

Ingredients:

2 cups old fashioned rolled oats

1/4 cup sunflower Seeds

1/4 cup slivered almonds

1/3 cup dried dates finely chopped

2 tbsp oat bran

1 cup bran flakes

1/4 cup wheat germ toasted

1/4 cup raisins

1/4 cup dried figs finely chopped

Preparation:

Preheat oven to 350F/180C. 

Combine oat flakes, sunflower kernels, and almonds in a baking pan and bake for 10 -15 minutes until almonds are slightly golden.

In a large bowl combine all the dried fruit with the bran and mix well. Add the toasted mixture after it has cooled a bit. Add the remainder of the ingredients and mix them all together well. 

I suggest storing this into an airtight container and keeping it in a cool dry place or your pantry.

Use in a bowl of yogurt with fresh fruit. Enjoy!

Power Morning Smoothie Meal

Ingredients:

2 cups nut milk (almond or other)

1/4 cup sunflower Seeds

1/4 cup slivered almonds

1 tbsp hemp seeds

1 cup peeled & chopped mango 

1 peeled & chopped banana

1 tbsp pre-soaked goji berries

1/4 cup chia seeds

1/4 cup dried figs finely chopped

Add water for desired consistency

Preparation:

Add all ingredients into a blender. 

Blend for a couple of minutes or until smooth.

Add water for adequate  consistency or to your liking.

Pour into a large bowl or in a mug to serve.

Combine with muesli or dried fruits, such as diced apricot & diced mango, or add fresh fruits, such as diced strawberry or blueberries.  Enjoy!
